Top gingerbread with the cream cheese topping, or serve with whipped cream.

Cook Time: 40 minutes

Total Time: 40 minutes

  • 1 cup plus 2 tablespoons sifted all-purpose flour
  • 1 1/4 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1/3 cup butter
  • 1/3 cup vegetable shortening
  • 1/2 cup boiling water
  • 1/3 cup firmly packed dark brown sugar
  • 1/2 cup molasses
  • 1 egg, beaten

Sift dry ingredients and spices together. Add shortening and butter to boiling water; stir until melted. Add sugar and molasses; combine mixture with dry ingredients, adding beaten egg then beating until gingerbread batter is smooth. Pour gingerbread batter into a buttered and floured 9-inch square baking pan. Bake at 350° for 35 to 40 minutes. Cut gingerbread into squares to serve warm or cool. Serve gingerbread with Cream Cheese Topping (below), if desired.

Directions for Gingerbread Topping:
Beat cream cheese with 3 tablespoons half-and-half, 1 tablespoon sugar, and lemon rind or vanilla. Makes about 1/2 cup, enough for topping 4 servings of gingerbread or fruit with 2 tablespoons each.

gingerbread WOW!!!, Member deb_b_yo

I made this recipe and baked it off as mini cupcakes for the dessert buffet of the restaurant I bake in. It came out great! Moist and flavourful...the hot water really makes a difference in the vibrancy of the spices.
