This flavorful southern tomato gravy is an old fashioned way to make a fresh tomato sauce. Bacon drippings and flour make the roux for this simple tomato gravy. Serve tomato gravy with freshly baked biscuits, over mashed potatoes or cooked green beans, or with slices of meatloaf.

- 4 tablespoons bacon drippings
- 4 tablespoons all-purpose flour
- 2 large tomatoes, cored, peeled, chopped
- 1 1/2 to 2 1/2 cups cold water
In a heavy skillet heat the bacon drippings over medium-low heat. Add flour and cook, stirring constantly, until medium brown in color. Do not let the flour burn. Stir in the tomatoes and 1 1/2 cups of the water. Cook, stirring occasionally, until reduced and thickened, about 25 to 35 minutes. Add more water as needed.
