Ingredients:
- 2 cups fresh green beans, cut in 1/4-inch pieces and cooked until crisp-tender
- (use both green and wax beans if you have them)
- 1 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 3/4 teaspoon salt
- 1 egg, beaten
- 1 cup milk
- oil for deep frying
Preparation:
In a medium bowl, stir together flour, baking powder, and salt. In a separate bowl, whisk egg with milk; stir in beans. Add bean mixture to dry ingredients, mixing until just moistened. Drop batter by tablespoonfuls into hot oil (370 °). Deep-fry in batches until golden brown, or for about 3 to 4 minutes. Remove to paper towels to drain.
Makes about 18 to 24 fritters.
