Ingredients:
- 1 cup green beans cut in 1/2-inch pieces
- 1 cup yellow wax beans cut in 1/2-inch pieces
- 1 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 3/4 teaspoon salt
- 1 beaten egg
- 1 cup milk
- oil for deep-fat frying
Preparation:
Cook green and wax beans in boiling water until crisp-tender. Drain well. Stir together flour, baking powder, and salt. Combine egg, milk, and cooked beans; add to dry ingredients, mixing just until moistened. Drop batter by tablespoonfuls into deep hot fat (about 375 degrees). Fry, a few at a time, until golden brown, or about three to four minutes; drain on paper toweling.Makes about 24 bean fritters.
