Green Beans with Sour Cream and Bacon


Green beans are cooked then topped with a tangy sour cream sauce and crumbled bacon.


  • 4 cups cooked green beans (fresh, frozen, or canned), reserve cooking liquid
  • 1/4 cup chopped onion
  • 3 tablespoons butter
  • 2 tablespoons flour
  • 2 tablespoons sugar
  • 2 tablespoons vinegar
  • 1/4 cup chopped parsley
  • 1 cup sour cream
  • 3 slices bacon, cooked crisp, crumbled


Drain cooked green beans, reserving 1 cup liquid; keep beans warm in serving dish. In a saucepan, sauté onion in butter; stir in flour. With the saucepan over low heat, gradually stir bean liquid into the flour and butter mixture. Stir in sugar, vinegar, and chopped parsley. Continue cooking, stirring constantly, until sauce is thickened. Add sour cream. Pour sauce over beans and top with crumbled bacon.
Serves 6 to 8.
