- 3 pounds snap green beans
- 1 small ham hock
- 1/2 teaspoon crushed dried red pepper
- 1 teaspoon salt
- 1 1/2 tablespoons brown sugar
- 1/2 small onion
Trim the stems and ends from the green beans and cut into 1-inch lengths. Set aside.
Place remaining ingredients in a pot with 1 cup of water. Bring to a boil, uncovered, and cook for 15 to 20 minutes.
Add the green snap beans, add more water to just cover the beans, and bring back to boil. Reduce heat to low and simmer for 3 hours, with the lid half on, or until the liquid has nearly evaporated.
Remove the ham hock and break up the ham into small pieces; add to beans.
