Thanks to Mimi for sharing this recipe on our forum. Grill, broil, or bake this marinated chicken.

Ingredients:

  • 3 lbs. of chickens (breasts, legs, thighs, or combination)
  • 3 cloves of garlic, crushed
  • 2 tablespoons chopped fresh basil
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil

Preparation:

Combine all ingredients in a large bowl and toss together. Refrigerate and let marinate 2 hours. Toss a few times while marinating. Grill chicken, turning frequently, until juices run clear when pierced with a fork. The marinated chicken may also be baked for about 50 to 60 minutes at 425°, or until cooked through.

A juicy recipeMay 12, 2008By klopfeja
"Even though I had to use dried basil instead of fresh, the recipe turned out quite nicely. I'd add some salt next time and be sure to use the fresh basil. I baked the chicken and it came out perfectly moist."
