Ground Beef Chili With Black Beans

Serve this hearty ground beef and black bean chili with cornbread or corn waffles (pictured). This is a great everyday family meal your family will ask for again and again.

Ingredients:

  • 1 1/2 pounds ground sirloin or extra lean ground beef
  • 1 large sweet onion, diced
  • 1 red bell pepper, diced
  • 2 large cloves garlic, minced
  • 1 small can (4 ounces) chopped mild green chile peppers
  • 2 cans (14.5 ounces each) diced tomatoes
  • 1 can (8 ounces) tomato sauce
  • 1 1/2 teaspoons chili powder
  • 1/2 teaspoon ancho chile powder or more chili powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon leaf oregano
  • dash chipotle chile powder, optional
  • 1 can (15 ounces) black beans, rinsed and drained
  • salt and pepper, to taste

Preparation:

In a large deep skillet or Dutch oven, brown the ground beef; add onion and bell pepper and saute until onion is tender. Add remaining ingredients. Simmer over low heat for about 1 to 2 hours, or transfer to the slow cooker and cook on LOW for 4 to 6 hours.
Serve with cornbread or Savory Corn Waffles (pictured).
Serves 6 to 8.

Easy recipe. I agree, needs to be a little spicier. I used fresh diced tomotoes and jalapenos. I added another tbls of California Chili Powder also. Easy recipe to double/triple up for parties. Serve with a dollop of sour cream to top it off.
