Halibut With Pineapple Salsa

Halibut With Pineapple Salsa

Delicious halibut with a tangy-sweet balsamic marinade and garlic. Cook this halibut on the stovetop or other indoor grill or broil.

Ingredients:

  • 4 halibut fillets, about 4 to 6 ounces each
  • .
  • Balsamic Marinade
  • 1/2 cup balsamic vinegar
  • 1/4 cup apricot preserves
  • 1/4 cup olive oil
  • 2 medium cloves garlic, or 3 small cloves, crushed and minced

Preparation:

Wash halibut and pat dry. Put in a food storage bag and add the marinade ingredients. Marinate halibut for about 2 to 3 hours.

Grill or broil, turning carefully, for about 3 minutes on each side. I use two spatulas to keep the fish from flaking into chunks.

along with hot cooked rice and a salad.
Serves 4.
