Shipwreck Casserole

This ground beef casserole has long been a popular family recipe, and it's a cinch to prepare and bake.


  • salt and pepper
  • paprika
  • 1 cup chopped onion
  • 3 medium potatoes sliced
  • 1 1/4 pounds lean ground beef
  • 1/2 cup uncooked long grain rice
  • 1 cup chopped carrots
  • 1 cup chopped celery
  • 1 can tomato soup
  • 1 cup boiling water

Easy to Prepare - Needs Improvement, Member mompls1989

I added Worcestshire Sauce & garlic powder between some of the layers & I added diced red & green peppers to the carrots & celery layer. Definitely bake covered. I didn't and after 3 hours the rice wasn't cooked. I added another can of tomato soup & water, put the top on & baked for another 40 minutes - much better. It still needed additional seasoning & we thought it might be improved with either a layer of mashed potatoes or biscuit dough on top. Warmed up with shredded cheese helped. I will try again - maybe in smaller quantities to get the flavor better. I like the layering & it was a very easy dish to prepare.
