This hamburger casserole is a tasty, hearty, one-dish layered meal. It is easy to prepare and a snap to bake. It's a "sloppy" kind of casserole, almost a stew, and the cheese helps to hold the vegetables together, resulting in excellent flavors.

It's a delicious all-in-one meal, so convenient that you will want to add it into your busy day dinner routine.

Ingredients

  • 1 pound ground beef

  • 1 large onion, chopped

  • 1 cup green bell pepper, diced and divided

  • 2 (14 1/2 ounce) cans diced tomatoes

  • 2 teaspoons Worcestershire sauce

  • 1/2 teaspoon chili powder

  • 2 teaspoons kosher salt

  • 2 to 3 cups potatoes, thinly sliced

  • 1/3 cup all-purpose flour

  • 1 1/2 cups frozen corn kernels

  • 1 1/2 cups lima beans

  • 1 1/2 cups shredded cheddar cheese

  2. Heat the oven to 375 F. Spray a 9-by-13-inch baking pan or a shallow 3-quart casserole with nonstick cooking spray.

  3. Combine ground beef, onion, half of the bell peppers, the canned tomatoes, Worcestershire sauce, chili powder, and kosher salt.

  4. Pat mixture into the prepared baking pan or baking dish.

  5. Arrange the sliced potatoes on top of the ground beef layer, and then sprinkle with the flour.

  6. Top the potatoes with the corn, lima beans, and then the remaining chopped bell peppers.

  7. Cover the pan tightly with foil and bake for 1 hour.

  8. Sprinkle with the cheese and bake for 15 minutes longer, or until the vegetables are tender, and the cheese topping is golden brown.

Tips

  • We recommend using a lean ground beef for this casserole, at least 85 percent, but preferably 90 to 93 percent. Combine that with a can of regular diced tomatoes and a can of diced zesty chili-style tomatoes, slightly drained.
  • If you're looking for shortcuts, use canned sliced potatoes in this dish. 

Recipe Variations

  • Instead of using frozen corn and lima beans, use drained canned vegetables in the recipe. They won't take long to cook, so you can add them when you add the cheese topping.
  • Top the casserole off with a bread crumb topping. Toss 1 1/2 cups of bread crumbs with 2 tablespoons of melted butter and sprinkle them over the casserole along with the cheese.
  • Top the casserole with French-fried onion rings when you add the cheese.
  • Sprinkle a layer of frozen shredded or Southern-style hash browns over the ground beef layer instead of the sliced potatoes.
  • Sprinkle a layer of drained canned mushrooms over the ground beef layer.
  • Use a Mexican blend of cheeses or a cheddar jack blend.
  • Omit the lima beans and add extra corn and potatoes to the dish.
