Autumn Ground Beef Casserole

This is a simple ground beef and corn casserole, great for an everday family meal.

  • 1/2 cup chopped onion
  • 2 green bell peppers, sliced
  • 2 tablespoons butter
  • 1 pound ground beef, lean
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon ground black pepper
  • 2 cups fresh cut corn or frozen, thawed
  • 4 tomatoes, sliced
  • 1/2 cup soft bread crumbs


Brown onions and peppers in skillet in butter; add ground beef, breaking up with a fork. Cook beef until no longer pink. Season with salt and pepper. In a greased 2-quart casserole, layer half of the corn, half of the meat, and half of the sliced tomatoes. Repeat layers then top with bread crumbs. Bake at 350° for 30 minutes.

there is potential, Member Moochiecat5

This was bland and I should have known it by the list of ingredients but I always follow recipes to the letter the first time I make them. It's a good starting point though and I think the addition of tomato soup, or cheese slices or herbs is sorely needed.
