Cook Time: 45 minutes
Ingredients:
- 1/2 cup chopped onion
- 2 green bell peppers, sliced
- 2 tablespoons butter
- 1 pound ground beef, lean
- 1 1/2 teaspoons salt
- 1/4 teaspoon ground black pepper
- 2 cups fresh cut corn or frozen, thawed
- 4 tomatoes, sliced
- 1/2 cup soft bread crumbs
Preparation:
Brown onions and peppers in skillet in butter; add ground beef, breaking up with a fork. Cook beef until no longer pink. Season with salt and pepper. In a greased 2-quart casserole, layer half of the corn, half of the meat, and half of the sliced tomatoes. Repeat layers then top with bread crumbs. Bake at 350° for 30 minutes.Serves 4
