A perfect choice for a busy weeknight dinner, this easy-to-make layered hamburger casserole is filled with ground beef, potatoes, celery, onions, peppers, and tomatoes, along with seasonings. This casserole is an easy everyday meal after a long day at work or school. Simply assemble it and then pop it in the oven and bake.

This layered casserole with hamburger is very versatile, and you can change it up by adding a layer of corn, green beans, thinly sliced carrots, or your choice of vegetable. Yukon gold or Russet potatoes work well for the potatoes in this dish. If the ground beef is not lean, brown it first and discard the drippings.

Both kids and the adults love this casserole, serve it with a tossed salad topped with your favorite dressing, and add an apple pie for dessert to round out the meal. 

Ingredients

  • 2 cups peeled, thinly sliced potatoes

  • 1 1/2 cups chopped celery

  • 1 pound extra-lean ground beef

  • 1 cup thinly sliced onions

  • 1/2 to 1 cup chopped red bell pepper, or mixture of green and red bell pepper

  • 1 (14 1/2-ounce) can diced tomatoes

  • 2 teaspoons salt

  • 1/4 teaspoon seasoned pepper

  • Bell pepper, cut into rings, for garnish

Steps to Make It

  1. Gather the ingredients.

  2. Preheat the oven to 350 F. Grease a 2 1/2-quart baking dish.

  3. Seasoning each layer lightly with salt and pepper, layer the thinly sliced potatoes, celery, ground beef, onions, bell pepper, and diced tomatoes in the baking dish.

  4. Sprinkle with remaining salt and pepper and top with bell pepper rings.

  5. Cover the baking dish with foil and bake in the preheated oven for about 1 1/2 to 2 hours, or until the vegetables are tender.

Glass Bakeware Warning

For premade casseroles or leftovers that are in a glass baking dish and have been refrigerated, do not place directly into a hot oven as the glass can shatter. Instead, place any cold glass bakeware into a cold oven to warm up while it preheats. Or, allow the bakeware to rest outside of the fridge for 30 minutes to reach room temperature while the oven preheats.

Tips

Double up the recipe and make two of these layered hamburger potato casseroles, and put one in the freezer for later use.


If you need smaller portions, why not split the recipe up between two 1 1/2 quart baking dishes and then enjoy one now and freeze the other one. When ready to use the frozen one, just thaw it overnight in the refrigerator and heat it up for dinner.

Recipe Variations

Top this casserole off with some shredded Cheddar cheese, if you'd like. When finished baking, uncover the dish, sprinkle some cheese on, and pop it back in the oven until the cheese has melted, approximately 10 minutes.  


Instead of ground beef, you can switch it up and use ground turkey, ground sausage, or a mixture of ground beef and pork.
