This spicy and flavorful ground beef casserole is made with a nicely seasoned filling, a crunchy corn chip topping, and a generous amount of shredded cheese. You can vary the toppings, as well. Try it with sliced green onions and cilantro instead of regular onions and lettuce.


  • 1 1/2 pounds lean ground beef
  • 1 teaspoon chili powder
  • 1 teaspoon dried leaf oregano
  • 1 teaspoon garlic powder
  • 1/2 cup taco sauce
  • 1 can (8 ounces) tomato sauce
  • 1/2 teaspoon salt, or to taste
  • dash of Tabasco sauce
  • 6 ounce bag corn chips, slightly crumbled
  • chopped onion
  • chopped tomato
  • grated cheese
  • chopped lettuce


Heat the oven to 350° F. Lightly grease a 2- to 2 1/2-quart baking dish. 

In a large skillet, brown the ground beef. Stir in the chili powder, garlic powder, oregano, and Tabasco. Add the taco sauce and tomato sauce. Taste and add salt, as needed.

Simmer the mixture for 10 minutes. Put half on bottom of the prepared baking dish. Top with about half of the crumbled chips. Add remaining ground beef mixture, some chopped tomato, onion, chopped lettuce, and grated cheese (use about 1 cup or more). Put remaining corn chips on top. Bake at 350° for 12 to 15 minutes, or until the casserole is hot and cheese is melted.

My husband found this recipe online, after I accidentally bought a 3 lb. hamburger tube, instead of a 2 lb tube. Needless to say, we had a lot of ground beef. We doubled the recipe, and it tastes awesome. We love it!!! I have a 3 year old, who is a big eater, he's a growing boy, what can I say. I have a smaller appetite, and my husband has a larger one, so it works great for all of us. Normally, I wouldn't have doubled the recipe, but I had pretty much all the ingredients. As I said, it's delicious, and very hearty, let's just say, I didn't need dessert afterwards. We added marble cheese on top, and used Tostito's nachos and hot sauce instead of Tobasco, and green onions instead of regular (I find the green ones add more flavor), it tastes awesome.
