Ham, Apples and Sweet Potato Casserole

A casserole recipe using sweet potatoes, ham slice, and apples.

Cook Time: 60 minutes

Ingredients:

  • 1 center slice ham, about 12 to 16 ounces
  • 3 medium sweet potatoes, about 1 1/2 pounds, peeled and sliced 1/4-inch thick
  • 2 tablespoons light brown sugar, packed
  • 4 apples, quartered
  • 3/4 cup hot water

"In general, its a good idea. Makes a messy grill. Too much cornstarch. I suggest only 1/2 tsp corn starch to start with, you can always continue cooking it to reduce it to the desired thickness. Also, don't need to cook kabobs as long as suggested, items are already cooked. Suggest long enough to crispen the pepper and/or heat through items with successful grill markings. Next time, I'm considering an appricott or mango glaze. In years past, I have used chili sauce in various recipes and liked it especially to tenderize an ole chuck steak (budget meal recipe). Actually, I think I'll take this recipe back to the testing grounds and do some good ole experimenting."
