Quick Ham Casserole

An easy ham casserole with noodles and cheese.

Cook Time: 30 minutes

Ingredients:

  • 1/3 cup mayonnaise
  • 1 tablespoon flour
  • 1 cup milk
  • 1/3 cup processed American cheese shredded
  • 1 package (10 ounces) frozen lima beans
  • 4 ounces broad noodles, cooked
  • 2 cups diced cooked ham
  • 1/2 soft bread crumbs tossed with 2 teaspoons melted butter

Preparation:

Preheat oven to 325°. In a saucepan over medium heat, combine mayonnaise and flour. Gradually add milk, stirring constantly until thickened. Add cheese and stir until melted. Pour sauce into a 1 1/2-quart casserole dish. Add lima beans and noodles. Add ham and sprinkle melted butter over top. Bake for 30 minutes at 325°.
Serves 4 to 6.

"i had leftover ham and this recipe used ingredients that I had available ( i used frozen peas in place of the lima beans). My family loved it and it was quick and easy. I served it with a salad and orange jello. Good for a mid-week comfort food meal."
