Ham and Vegetable Skillet

Ham recipe for the skillet, with potatoes and peas.

Cook Time: 25 minutes

Total Time: 25 minutes

Ingredients:

  • 1 large onion, halved and sliced
  • 3 tablespoons butter or margarine
  • 1 pound cooked diced ham
  • 2 pounds potatoes, cut in 1/2-inch cubes
  • 1/2 teaspoon salt, or to taste
  • 1/8 teaspoon pepper
  • 1/2 teaspoon crumbled dried rosemary
  • 1 tablespoon flour
  • 1 cup beef broth or bouillon
  • 1 to 2 cups frozen peas (about 10 ounces)

Preparation:

In a large skillet, sauté onion in the butter until lightly browned. Add ham; cook and stir for 3 minutes. Add potatoes; sprinkle with salt, pepper, rosemary and the flour. Stir. Add beef broth to skillet; bring to a boil. Reduce heat, cover, and simmer until potatoes are just tender, about 10 minutes. Add peas and simmer until peas are done, about 10 minutes longer.
Ham recipe serves 4.

Excellent use of left over ham, Member songwarrior

This was a very good recipe. The ham, potatoes and peas blended very well with the beef broth. I don't generally like rosemary, but the mixture of all the flavors worked very well and it was not overwhelming. Would definitely make it again.
