Ham Patties

A quick and easy meal using leftover ham and potatoes.

Ingredients:

  • 1 cup cooked chopped ham
  • 1 1/2 cups leftover mashed potatoes
  • 1/2 cup finely minced onion
  • 3/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/2 cup flour
  • 1 to 2 tablespoons butter
  • 2 tablespoons vegetable oil

Preparation:

Blend chopped ham with mashed potatoes, onion, salt, and pepper. Form mixture into 1/2-inch patties about 3 inches in diameter. Dip patties in flour or bread crumbs, coating both sides. Heat butter and oil in a large skillet over medium heat. Fry patties for about 5 to 7 minutes on each side, until hot and lightly browned.
Serves 4 to 6.
