Honey Dijon Smoked Picnic

Serve this smoked picnic with potatoes, a fruit salad or pineapple slices, and a side dish vegetable and save your dinner leftovers and the meaty bone for soups and sandwiches.

Ingredients:

  • 1 smoked picnic ham, about 9 to 11 pounds
  • 1/3 cup brown sugar
  • 1/4 cup honey
  • 1/4 cup spicy brown mustard or grainy Dijon
  • Dash ground black pepper
  • 1 1/2 teaspoons curry powder

Preparation:

Wash the ham and remove casing; cut away excess fat and rind. Put in a large kettle and cover with water. Bring to a boil, cover, and simmer for about 3 to 3 1/2 hours, until the meat is very tender.

Combine the remaining ingredients in a small bowl.

Drain the ham and place in a roasting pan (line with foil for less mess). Brush the glaze over the ham and bake, basting frequently, for about 45 minutes.
Serves 6.
