Here are some of my favorite recipes for a wonderful Mother's Day brunch or special breakfast. Choose from elegant crepes, wonderfully easy baked French toast, breakfast casseroles, fancy eggs, and more. Whether you are a beginning cook or quite comfortable in the kitchen, there's a recipe for you!

1. Warm Nectarine Crepes

These crepes are delicious with the flavorful peach brandy sauce and poached nectarines, but fresh peaches would work very well in this recipe. Plan a little ahead for this recipe -- the crepe batter should be made 1 hour or more before cooking. Top these crepes off with a little whipped cream and orange zest strands or fresh blueberries.

2. Baked French Toast With Blueberries

Prepare this delicious breakfast dish the night before, then pop it in the oven in the morning. Serve with orange wedges or warm spiced mixed fruit.

3. Spicy Sausage, Egg, and Cheese Panini

Spicy andouille sausage makes this breakfast or brunch sandwich extra-special. Add a few tomatoes to the plate with a drizzling of vinaigrette, or serve with home fries for a hearty meal. This recipe will make 2 medium sandwiches or 1 large sandwich, but it can easily be doubled or tripled for a larger family or gathering.

4. Mississippi Breakfast Bake With Sausage Patties

This breakfast casserole is a tasty combination of eggs, bread, sausage, diced tomatoes and green onions, and Monterey Jack or Cheddar cheese. It's one of our favorite breakfast casserole recipes.

5. Eggs Benedict

For an extra-special Mother's Day brunch, try serving the eggs with fresh juice or orange juice and champagne mimosas, along with sliced and diced fresh fruit.

6. Blueberry Ricotta Pancakes

These blueberry ricotta pancakes are perfect for a special breakfast or brunch, and they're easy to prepare. Ricotta cheese gives them a wonderful texture and orange juice gives them extra flavor.

7. Easy Confetti Scrambled Egg Sandwich

A little bacon or ham jazzes up this easy, hearty breakfast or lunch sandwich. For a lighter sandwich, make it light bread instead of the croissant, or use only 1 egg or egg substitute and omit the bacon or ham.

8. Fluffy Pecan Pancakes

Fluffy pecan pancakes are made light and airy with beaten egg whites. Enjoy these pancakes with your favorite syrup.

9. Country Garden Omelet

Here's a 2-egg omelet recipe with green onions, diced tomatoes, and shredded cheese, along with seasonings. Easy and delicious!

10. Southern Sausage Gravy and Biscuits

An old-fashioned Southern favorite, made with breakfast sausage and milk, along with freshly baked and split buttermilk biscuits.
