These crepes are delicious with the flavorful peach brandy sauce and poached nectarines, but fresh peaches would work very well in this recipe. This delicious pain perdu -- or lost bread -- is a Cajun style French toast with a little vanilla in the egg batter. This version is baked, which means it's cooked all at once instead of in batches.
