Hot dogs can be more than ballpark food. This comforting, economical, easy-to0make hot dog casserole turns hot dogs into a full dinner with vegetables. It contains canned baked beans and corn, fresh green bell pepper, and onions, and a melted cheese topping. The addition of chili powder, tomato sauce, and mustard makes a flavorful, no-fuss sauce. 

The casserole is as attractive as it is flavorful. It’s also very versatile, you can modify the ingredients to your family’s taste. As for the hot dogs, pick your favorites, either pork, beef, chicken, or turkey hot dogs. Or, if you are a vegan, use vegan hot dogs (and also substitute the American cheese with vegan cheese to make it a fully vegan dish). Instead of green bell pepper, you can use red bell pepper, which will make it sweeter. If the sugar and salt content in traditional baked beans is a concern, use a product that has reduced sugar and sodium. Instead of canned corn, you can also use frozen corn. 

The flavorings can also be adapted. Yellow mustard has a strong flavor, to mellow it down, use honey mustard or Dijon mustard. To cut down on the spiciness of the dish—or increase it, if you like it spicy—use less or more chili powder. Finally, for the cheese, instead of American cheese, you can use any cheese that melts well, such as Colby or Swiss cheese. 

This casserole can also be made ahead. After sautéing the onions and peppers, toss them with the remaining ingredients except for the cheese and pour them in the casserole dish as described. Cover the dish with foil and refrigerate for up to one day until ready to bake. 

Serve the casserole with biscuits or cornbread for a delicious family meal.

 

 

 

 

Ingredients

  • 1 green bell pepper, cut into 1/2-inch pieces

  • 1 large onion, coarsely chopped

  • 2 tablespoons vegetable oil

  • 1 (16-ounce) can baked beans

  • 1 (15-ounce) can whole kernel corn, drained

  • 1 (8-ounce) can tomato sauce

  • 2 tablespoons yellow mustard

  • 2 teaspoons chili powder

  • 1 pound hot dogs, cut into 1/2-inch pieces

  • 4 slices American cheese, halved diagonally, or 1/2 cup shredded cheese

Steps to Make It

  1. Preheat the oven to 350 F.

  2. Lightly grease a 2-quart casserole.

  3. In a skillet, sauté the onion and green pepper in vegetable oil for about 5 minutes, or until onion is tender. Add the beans, corn, tomato sauce, chili powder, and mustard; stir to blend. Add sliced hot dogs and stir to blend ingredients.

  4. Pour hot dog and beans mixture into the prepared 2-quart casserole.

  5. Bake in the preheated oven for 25 minutes. Arrange cheese slices over the top of casserole and bake for 5 minutes longer, or until cheese has melted.
