Recipes for two and tips for scaling recipes down

Recipes for two can be difficult to find, but there are some easy ways to adjust. I like to cook a larger quantity recipe and freeze half or plan leftovers, but you need to have the freezer or refrigerator space.

Main dish and side dish recipes are pretty forgiving and can usually be scaled down with good results. You can easily cut a main dish in half by cutting back on the amount of meat, but you might leave the sauce or liquid amounts about the same. If you aren't sure about the seasonings, taste and season near the end of cooking time.

Desserts can be a little more difficult to cut down. A baked dessert is much less forgiving, but most freeze well in pre-sliced or in small portions. Cut a cheesecake into small wedges and freeze individually. Consider cupcakes or muffins instead of a cake or coffee cake, and bake a half-pound cake in a loaf pan instead of a full-sized pound cake.
