Ingredients:
- 2/3 cup sugar
- 2 teaspoons cornstarch
- 1 can (12 ounces) low fat (2%) evaporated milk
- 1/2 cup semisweet chocolate chips
- 1 cup plain yogurt, low fat if possible
- 1 teaspoon vanilla
- 1/4 to 1/2 cup mini chocolate chips or chopped chocolate, optional
Preparation:
In a saucepan combine the sugar and cornstarch. Stir in evaporated milk and chocolate chips and put the pan over medium heat. Stirring constantly, heat until chocolate is melted and mixture is thickened.Remove from heat and stir in the yogurt and vanilla.
Refrigerate for 2 hours, or until thoroughly chilled. Add mini chocolate chips to the chilled mixture, if using.
Pour mixture into ice cream machine container and freeze according to manufacturer's instructions.
Makes about 3 to 3 1/2 cups.
