Chocolate Cream Cheese FrostingOctober 21, 2008By AlecMcKelvey
"I made the frosting twice. The first time my wife gave about 3 hours notice to make a white cake with chocolate frosting and to bring to her work place for a b-day party for a co-worker. Needless to say to make a cake from scratch, bake it and have it frosted in 3 hours delivered was a challenge. I did meet the time frame however--------. The cake was still warm when the frosting was applied. The frosting seemed a bit thin and in transporting the 9X 13 was tilted to the rear. The frosting shifted enroute and made a bit of a mess. When uncovered the frosting was shifted back to the proper place but was still a bit too soft. The taste was excellent and the ladies ALL told me i was their hero !!! Also i am the best cake baker in the county and then stated it IS a small county!! Today i made the frosting again adding more powdered sugar by the half cups. The third half cup made the frosting to the stiffness to spread nicely. The cake is for a WW11 veteran who is 85 tomorrow. A little surprise for him and his wife. The frosting, according to the ladies on the first try, was very tasty !! As they all are smooth talkers, they are assured a cake will be coming for the next birthday party."
