Chocolate Cream Cheese Frosting

This makes enough chocolate cream cheese frosting for a two layer cake.

Ingredients:

  • 1/4 cup butter, softened
  • 8 ounces cream cheese, softened
  • 2 ounces (2 squares) unsweetened chocolate, melted
  • dash of salt
  • 3 cups powdered sugar
  • 1/3 cup half-and-half
  • 1 teaspoon vanilla extract

Preparation:

Cream together the butter and cream cheese. Add melted chocolate, salt, sifted confectioners' sugar, half-and-half, and vanilla. Beat until smooth and spreadable.

"I have a friend who can not have any form of soy! She had some soy free chocolate and this went quite well for this recipe. It is very easy to make, and tastes delicious. I'm sure I'll be passing this recipe on to others! Thanks!! Suggestion - let people know that if you use a microwave to melt your chocolate, if it is dark chocolate, start at 45 seconds - then stir - do not separate the chocolate as the less thick the faster to burn!"
