Seven Minute Frosting

  • 2 large egg whites, unbeaten
  • 1 1/2 cups granulated sugar
  • 2 teaspoons light corn syrup
  • 1/3 cup cold water
  • dash salt
  • 1 teaspoon vanilla


Place egg whites, sugar, corn syrup, water, and salt in top of double boiler (not over heat yet) - beat 1 minute with an electric hand-held mixer to blend. Place over boiling water and cook, beating constantly, until frosting forms stiff peaks, about 7 minutes. Do not over cook. Remove from boiling water. Pour frosting into a mixing bowl. Add vanilla and beat until spreading consistency is reached, about 2 minutes.

Seven Minute Frosting for Lemon Cake
Add 1/8 teaspoon of lemon extract along with vanilla and tint with a few drops of yellow food coloring. Top with tinted coconut, if desired.

To tint coconut, shake 1 1/3 cups flaked coconut in a jar with a few drops of yellow food coloring until uniformly tinted.

7 minute frosting, Member pinteareed

Mine was more like 10 minute frosting as I had to wait for the water to come to a boil in the double boiler.... But it made a great shiny meringue-like frosting I remember my grandmother making. Yummm. Lil
