Fig Cake With Caramel Glaze

This delicious caramel glaze is the perfect topping for a spice cake, or use it to finish just about any Bundt cake.

Ingredients:

  • 4 tablespoons butter
  • 1/4 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1/2 cup heavy whipping cream

Preparation:

In a saucepan over medium-low heat, melt the butter. Stir in sugars. Cook the butter and sugar mixture, stirring, for 1 minute or until bubbly. Stir in the heavy cream. Bring to a boil. Cook the mixture, stirring constantly, for 2 minutes.

Remove from heat and cool slightly. Spoon the caramel glaze over a completely cooled cake.

I have been making caramel icing for a few years and I have never used Whipping Cream. I still didn't with this recipe. I just substituted it with Evaporated Milk. Turned out great. I doubled the recipe and added walnuts and that made the cake even richer and chewier. This is a very good and I highly recommend it for not only the Moist Fig Cake, but for any spice cake.
