Spicy Hot Pepper Jelly

A tasty Louisiana-style hot pepper jelly, a great gift for the holidays.

INGREDIENTS:

  • 1 cup water
  • 2 teaspoons hot pepper sauce, such as Tabasco, or to taste
  • 1/3 cup lemon juice
  • 3 cups sugar
  • 1/2 bottle (3 ounces) liquid pectin
  • red food coloring

PREPARATION:

In a large saucepan, combine water, hot pepper sauce, lemon juice, sugar. Bring mixture to a boil, stirring constantly. Add pectin to boiling mixture, along with a few drops of the red food coloring. Cook, stirring, until mixture comes to a full rolling boil. Boil hard for 30 seconds. Remove from heat and skim off foam. Pour into 3 hot sterilized 8-ounce jelly glasses, leaving 1/4-inch headspace. Wipe jar rims and adjust lids. Process for 5 minutes in boiling water bath.
