Key Lime Pie Recipe

A favorite recipe for key lime pie, from Mitzi.

Ingredients:

  • 3 egg yolks
  • 1 can sweetened condensed milk
  • 1/2 cup key lime juice
  • 2 teaspoons grated lime rind
  • 1 graham cracker pie crust, 9 inch

Preparation:

Combine the egg yolks and milk in a mixing bowl. Beat with a mixer at high speed until light and fluffy, about 5 minutes. Gradually beat in lime juice and 2 teaspoons lime zest. Pour mixture into the crust. Bake at 350° for about 12 minutes (to cook eggs). Cool slightly and then refrigerate. Serve with healthy dollop of Cool Whip.
