Summertime lunches have to be quick and easy, especially if your kids are busy with other things. Here are several great lunches and snacks which are quick and easy to make or can be made ahead of time, and they're sure to please the kids.

White Chicken Pizzas
These delicious little English muffin pizzas are made with Alfredo sauce from the jar, cooked diced chicken, ripe olives, diced tomatoes, and any of your favorite pizza toppings, along with shredded Mozzarella cheese.

Ham Salad Rolls
Great sandwich rolls made with minced or ground ham, along with hard cooked egg, mayonnaise, pickles, and lettuce. These make a delicious lunch with chips, or serve them with French fries for an easy sandwich supper.

Cocoa Cola Cake
The kids will love this cake even more when they find out it's made with chocolate, marshmallows, and cola. It really is delicious!

Easy Tuna Melts
My family loves these tuna melts any time of the day. Older kids can put these together easily and microwave them to melt the cheese, or bake them and serve with fries for a great family dinner.

Monte Cristo Sandwiches
These tasty and popular egg-dipped and French-toasted sandwiches are filled with deli sliced ham, turnkey, and chese. Serve these with sliced tomatoes and chips for a hearty lunch or dinner.

Baked Ham & Cheese Quesadilla
Another take on the ham and cheese sandwich, but these tortilla sandwiches are filled with Monterey Jack cheese, sliced ham or smoked turkey, diced tomatoes and green onions, and they are baked in the oven. Use a pizza cutter to cut these into wedges, then serve with a dollop of sour cream or salsa for dipping.

Here are several variations on chicken sandwich spread, including a variety of seasonings, vegetables, nuts, herbs, and other possible add-ins. This spread would be easy to make the day before, and all the kids have to do is spread it on bread or fill sandwich rolls.

This is an easy sweet snack to make for the kids, with butterscotch chips, peanuts and peanut butter, and chow mein noodles. Just microwave the chips and peanut butter then mix with the noodles and peanuts.
