Ingredients:

  • 2 cups diced cooked lamb
  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 4 ounces sliced mushrooms
  • 1 1/2 cups cooked rice
  • 2 cans (14.5 ounces) tomatoes
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon curry powder
  • 2 to 4 tablespoons grated Parmesan cheese or shredded Cheddar or other

"I modified this recipe - I used one can of tomatoes along with some leftover juice from the lamb; sauteed it in a pan on top of the stove without the rice; warmed the rice - served it in a bowl over the rice with a dollup of sour cream on top. It was delicious. My concern with the casserole was that it would cook too long - my version was soooo delicious - try it; you'll love it."
