Lamb with rice and vegetables, along with rice and tomatoes.
Ingredients:
- 2 pounds boneless lamb, cut in 1-inch pieces
- 2 cups sliced potatoes
- 1 cup converted rice
- 2 onions, sliced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon ground cumin
- 1 pound zucchini, sliced
- 1 12-oz pkg artichoke hearts, thawed,halved
- 2 cups diced tomatoes
Preparation:
Place sliced potatoes in the bottom of a slow cooker. Layer remaining
ingredients on top. Pour 2 cups of water (or broth) over all. Cover and cook on low
8 to 10 hours.
