Crockpot Mediterranean Lamb Recipe

Lamb with rice and vegetables, along with rice and tomatoes.

Ingredients:

  • 2 pounds boneless lamb, cut in 1-inch pieces
  • 2 cups sliced potatoes
  • 1 cup converted rice
  • 2 onions, sliced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon ground cumin
  • 1 pound zucchini, sliced
  • 1 12-oz pkg artichoke hearts, thawed,halved
  • 2 cups diced tomatoes

Preparation:

Place sliced potatoes in the bottom of a slow cooker. Layer remaining ingredients on top. Pour 2 cups of water (or broth) over all. Cover and cook on low 8 to 10 hours.
