Orange Blossom Cake

An orange cake recipe with fresh orange and a cake mix. See below for more orange cake recipes.

Ingredients:

  • 1 medium orange
  • 1 package (2-layer size) yellow or butter cake mix
  • 1 1/2 cups sugar
  • 3 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 4 tablespoons butter
  • 1 cup water
  • 1 can (1 1/3 cups) flaked coconut
  • Fluffy White Frosting or Orange Butter
  • Frosting, see links below
  • orange sections for garnish

Preparation:

Zest the orange. Peel, seed, and finely chop orange sections. Combine chopped orange with the zest and set aside. Prepare cake mix following package directions. Fold in 1/3 cup of the orange and zest combination. Pour into 2 greased and floured 8-inch round cake pans. Bake according to package directions for layers. Cool 10 minutes in pans. Remove cakes to wire racks to cool completely. Prepare Filling. In a saucepan, combine sugar, cornstarch, salt, butter, water, and remaining orange mixture. Cook, stirring, until mixture thickens and boils; cook 2 minutes longer. Cool. Stir in coconut. Carefully split each layer once, to make 4 layers. Spread layers and top of cake with filling. Prepare fluffy white frosting, homemade or purchased, and spread on sides of cake. Garnish top of cake with fresh orange sections, if desired.
