Cook Time: 35 minutes
Ingredients:
- 2 cups sauerkraut, drained (about 16 ounces)
- 1/2 teaspoon celery seeds
- 3 tablespoons brown sugar
- 1 1/4 cup tomato juice
- salt and pepper
- 1 pound pork sausage meat, browned and drained
- 1 green bell pepper, chopped
- 2 1/2 cups cooked Lima beans (about 16 ounces frozen)
- soft bread crumbs
Preparation:
Drain sauerkraut and rinse well with cold water. Mix with celery seeds, brown sugar and tomato juice; season with salt and pepper. Brown sausage in a large skillet breaking up with a fork; drain off excess fat. Add chopped peppers and Lima beans to skillet with sausage. In a lightly greased shallow 2-quart baking dish, put a layer of sauerkraut mixture. Top with a layer of Lima beans and sausage. Repeat. Top with bread crumbs. Bake at 350° for 25 minutes.Serves 6.
