Crockpot Butter Beans

Butter Beans with Sausage and Cornbread

In this easy slow cooker recipe, dried lima beans or butter beans are cooked with smoked sausage and seasonings. A little Tabasco adds spicy flavor to these beans.

Yield: Serves 6


  • 1 lb. dry limas
  • 1 lb. smoked sausage, such as andouille, kielbasa, or similar
  • 1 bunch green onions
  • 1/2 tsp. garlic powder
  • 4 beef bouillon cubes
  • 3/4 tsp. Tabasco sauce
  • 6 c. water


Wash limas and put them in a slow cooker. Add 6 cups water. Slice smoked sausage into round pieces and add to limas. Chop green onions and add to mixture. Now add remaining ingredients and mix.

Cover and cook in slow cooker on high for 8 to 10 hours.

Serve with cornbread or biscuits.

Have made it many times with no alteration to recipe other than when beans are done take off crockpot lid for an hour then reheat in crockpot for hour before serving. Thickens up sauce. Do mine on an old Sears crockpot and they are done in 6-7 hours on high. At one point this recipe had 1/2 tsp. salt and cayenne pepper to taste in it and thats how I copied it and make it now. You can also use ham bone or ham hocks.
