Succotash

Ingredients:

  • 1 teaspoon vegetable oil
  • 1 cup frozen lima beans
  • 1 cup fresh or frozen corn
  • 1 tablespoon chopped onion
  • 2 cloves garlic, minced
  • 2 tablespoons chopped scallions
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon paprika

Preparation:

Add oil to a large non-stick skillet; heat over medium heat. Add lima beans, corn, onions, and garlic. Cook for about 8 to 10 minutes, stirring constantly. Stir in scallions, salt and paprika.
Serves 4.
