Ingredients:
- 1 teaspoon vegetable oil
- 1 cup frozen lima beans
- 1 cup fresh or frozen corn
- 1 tablespoon chopped onion
- 2 cloves garlic, minced
- 2 tablespoons chopped scallions
- 1/4 teaspoon salt, or to taste
- 1/8 teaspoon paprika
Preparation:
Add oil to a large non-stick skillet; heat over medium heat. Add lima beans, corn, onions, and garlic. Cook for about 8 to 10 minutes, stirring constantly. Stir in scallions, salt and paprika.Serves 4.
