I needed something quick and different and this worked. I used Rotel for the tomatoes to give it a little more snap. I also added ""Better Than Bouillon"" ham base with about an ounce of water. That is my go-to seasoning for any vegetable dish. It amazes me that more cooks don't know about it. Anyway, the final product was very tasty and it didn't take long to make... Always a good combination.
