Lobster stew with butter, milk, cream, lobster, and seasonings.

INGREDIENTS:

  • 1 fresh lobster, 2 pounds
  • butter
  • 3 cups whole milk
  • 1 cup heavy or whipping cream
  • salt and pepper
  • paprika

PREPARATION:

Boil the lobster; remove meat. Cut meat into cubes. Heat 3 to 4 tablespoons of butter in a skillet; add lobster and sauté until lightly browned. Heat milk; add to the lobster. Cook slowly for 5 minutes. Add cream and bring just to the boiling point. Add salt and pepper to taste. Sprinkle with paprika. The flavors are even better if made ahead and reheated.
