Yield: Serves 4 to 6
Ingredients:
- 8 ounces macaroni
- 4 tablespoons butter, divided
- 1/2 cup finely chopped onion
- 2 tablespoons flour
- 2 cups milk
- 1 1/2 teaspoons salt
- freshly ground black pepper
- dash ground nutmeg, or to taste
- pinch ground cayenne pepper
- 2 1/2 cups shredded sharp Cheddar cheese or a triple Cheddar blend, divided
- 1/3 cup fine dry bread crumbs
Preparation:
In a saucepan over medium-low heat, melt 2 tablespoons of butter. Cook the onion until tender. Stir in flour until well blended. Stir in the milk, salt, pepper, nutmeg, and cayenne pepper and continue cooking, stirring, until thickened. Add 2 cups of the cheese and continue cooking, stirring, until cheese is melted. Combine the macaroni with the cheese sauce and spoon into the prepared baking dish. Top with the remaining 1/2 cup of cheese.
Melt the remaining 2 tablespoons of butter and toss with the bread crumbs. Sprinkle over the casserole. Bake for 25 to 30 minutes, until hot and bubbly.
