The tangy sauce for these sweet and sour meatballs is flavored with pineapple, bell pepper strips, and celery.

Cook Time: 30 minutes

Total Time: 50 minutes

Yield: Serves 4

Ingredients:

  • 1/4 cup fine dry bread crumbs
  • 2 tablespoons minced onion
  • 1 teaspoon salt
  • dash pepper
  • 2 cups water
  • 1 pound lean ground beef
  • 1 egg, well beaten
  • 2 tablespoons cooking oil
  • 1 cup sliced celery
  • 1 red bell pepper, cut in strips
  • 1 green bell pepper, cut in strips
  • 1/3 cup cider vinegar
  • 1/3 cup light brown sugar

AWESOME! Ok, I did tweak it a little bit, but only because I didn't want to leave part of can of pineapple in the fridge. Instead of the 1 1/2 cup of added water, I just dumped a whole 15 oz can of Pineapple Tidbits in it's own juice to the veggies. Next time I might cut back a tiny bit on the vinegar, and I used light soy sauce so added an extra 2 tbsp and that was it. Will be using this recipe with chicken, shrimp and pork too. Thank You for putting this one up!
