Spicy Saucy Meatballs
Chopped water chestnuts add crunch to these tasty meatballs and the horseradish adds flavor.

Ingredients:

  • 1 to 1 1/2 pounds lean ground beef, about 90%
  • 1/2 cup water chestnuts, finely chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 2 teaspoons prepared horseradish
  • 2/3 cup sweet orange marmalade
  • 1/4 teaspoon garlic powder
  • 1 1/2 tablespoons flour
  • 2 tablespoons soy sauce
  • 1 tablespoon lemon juice
  • 1 cup ketchup
  • 1/2 teaspoon ground ginger
  • 2 tablespoons brown sugar
  • 1/4 cup water

Preparation:

Combine ground beef, water chestnuts, salt, pepper, and horseradish. Shape meat mixture into 1-inch meatballs and place in 1 1/2-quart baking dish. Combine remaining ingredients together and pour over meatballs. Bake for 45 to 50 minutes at 350°. Serve hot.
Serves 4.

Great Meatballs!, Member amcharl

This recipe is wonderful and I've gotten lots of compliments on it. I just use Armour frozen meatballs and then warm up the meatballs in the sauce -- either in the microwave or on top of the stove. This last time I made it I also added a little bit of Major Grey's chutney. Wonderful!
