Chopped water chestnuts add crunch to these tasty meatballs and the horseradish adds flavor.
Ingredients:
- 1 to 1 1/2 pounds lean ground beef, about 90%
- 1/2 cup water chestnuts, finely chopped
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
- 2 teaspoons prepared horseradish
- 2/3 cup sweet orange marmalade
- 1/4 teaspoon garlic powder
- 1 1/2 tablespoons flour
- 2 tablespoons soy sauce
- 1 tablespoon lemon juice
- 1 cup ketchup
- 1/2 teaspoon ground ginger
- 2 tablespoons brown sugar
- 1/4 cup water
Preparation:
Combine ground beef, water chestnuts, salt, pepper, and horseradish. Shape meat mixture into 1-inch meatballs and place in 1 1/2-quart baking dish. Combine remaining ingredients
together and pour over meatballs. Bake for 45 to 50 minutes at 350°.
Serve hot.
