Taco Meat Balls


Taco meatballs, made with lean ground beef and cooked rice, along with taco sauce and cheese soup.

Cook Time: 1 hour

Total Time: 1 hour


  • 1 pound lean ground beef
  • 1 cup finely chopped onion
  • 1 cup finely chopped green pepper
  • 1 cup finely chopped celery
  • 2 cups cooked rice
  • 2 eggs -- beaten
  • 2 teaspoons garlic salt
  • 1 can (8oz) taco sauce
  • 1 can condensed Cheddar cheese soup -- undiluted


Combine meat, onions, green pepper, celery, rice, eggs and garlic salt. Mix well and form into 12 meat balls. Place in a lightly greased 2 1/2-quart casserole.

Bake at 350° for 30 minutes; drain off any excess grease. Blend and heat taco sauce and soup; pour over meat balls. Cover and continue baking for 30 minutes longer.
Serves 6.
