Serve this delicious old-fashioned meatloaf with mashed potatoes and green beans or a corn dish, or serve it with your favorite vegetables. Leftovers are great for sandwiches.

Prep Time: 12 minutes

Cook Time: 1 hour, 15 minutes

Total Time: 1 hour, 27 minutes

Ingredients:

  • 1 1/2 pounds ground beef, 85%
  • 20 saltine crackers, crushed
  • 1/2 cup finely chopped onion
  • 1/4 cup finely chopped green bell pepper
  • 1 large egg
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon ground black pepper
  • 1/3 cup ketchup
  • 2 tablespoons milk
  • 1 teaspoon Worcestershire sauce
  • Topping
  • 1/2 to 3/4 cup ketchup or barbecue sauce

Preparation:

Heat the oven to 350°. Grease an 8 1/2 x 4 1/2-inch loaf pan or line with foil and lightly grease.

In a large bowl, combine ground beef with the crushed saltines, onion, green pepper, egg, paprika, garlic salt, thyme, black pepper, 1/3 cup ketchup, milk, and Worcestershire sauce.

Pack the meat mixture into the loaf pan and bake for 1 hour. Carefully pour off excess grease. Spread with the 3/4 cup ketchup or barbecue sauce and continue baking for 15 minutes longer, or until the meatloaf registers at least 160° on an instant read food thermometer inserted into the center.
