Creole Meat Loaf

This flavorful meatloaf is delicious with mashed potatoes and corn, or serve with your favorite vegetables.

Ingredients:

  • 1 1/2 pounds lean ground beef
  • 1/2 pound sausage
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped onion
  • 1 tablespoon chopped parsley
  • 1 1/2 cups fine dry bread crumbs
  • 2 eggs
  • 1/4 cup milk
  • 1 can (8 ounces) tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons salt
  • 2 teaspoons prepared mustard or Creole mustard
  • 1/2 teaspoon dried leaf oregano
  • 1/4 teaspoon ground black pepper
  • 1/2 cup chili sauce for topping

Preparation:

Mix all ingredients except chili sauce. Place in a 9x5x3-inch loaf pan. Bake at 350° for 1 1/2 hours. Drain off fat. Invert on a shallow pan and spread chili sauce over top. Return to oven and bake for 5 to 8 minutes longer.
Serves 8.
