Southwestern-Style Meat Loaf

This meatloaf is packed with flavor, and it's delicious served with salsa.

Ingredients:

  • 1 pound ground beef, lean
  • 3/4 to 1 pound ground veal
  • 1 egg
  • 1/2 cup fine dry bread crumbs
  • 1 can (approx. 4 1/4 ounces) chopped ripe olives
  • 1 can (4 ounces) chopped mild green chile pepper
  • 1 cup corn kernels
  • 1/2 cup salsa, plus more for topping
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon pepper
  • 1/4 teaspoon salt, or to taste

"This recipe is the first meatloaf recipe that I have used that was as moist as promised. The flavors were excellent, though I did not have the olives to put in. Prior to making this, I had read the meatloaf tips section, and felt it flowed with some of the recomendations made there. Easy for begining cooks. A great basic meatloaf recipe. I served it with sides of baked beans and buttered mashed potatos which offered a nice taste and presentation combination."
