Southwestern-Style Meat Loaf

This meatloaf is packed with flavor, and it's delicious served with salsa. Serve this flavorful meatloaf with potatoes or Mexican style rice for a fabulous family meal. Feel free to use ground pork or more ground beef instead of veal.

Cook Time: 1 hour, 15 minutes

Total Time: 1 hour, 15 minutes

Yield: Serves 6 to 8

Ingredients:

  • 1 pound ground beef, lean
  • 3/4 to 1 pound ground veal
  • 1 egg
  • 1/2 cup fine dry bread crumbs
  • 1 can (approx. 4 1/4 ounces) chopped ripe olives
  • 1 can (4 ounces) chopped mild green chile pepper
  • 1 cup corn kernels
  • 1/2 cup salsa, plus more for topping
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon pepper
  • 1/4 teaspoon salt, or to taste

Preparation:

Combine all ingredients except topping in a bowl and combine until blended. A wire potato masher works well for mixing meatloaf. Pack into a loaf pan and bake at 350° for about 1 hour and 15 minutes.
Serves 8.

Good Fall Dish, tasty and moist, Member krisk420

This recipe is the first meatloaf recipe that I have used that was as moist as promised. The flavors were excellent, though I did not have the olives to put in. Prior to making this, I had read the meatloaf tips section, and felt it flowed with some of the recomendations made there. Easy for begining cooks. A great basic meatloaf recipe. I served it with sides of baked beans and buttered mashed potatos which offered a nice taste and presentation combination.
