Ingredients:

  • 1 1/2 pounds lean ground beef
  • 1/2 cup chopped onion
  • 1 can (8 oz) tomato sauce
  • 1 egg, beaten
  • 1 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup fresh bread crumbs
  • 1 teaspoon prepared mustard
  • 3/4 cup water
  • 2 teaspoons vinegar
  • 2 teaspoons brown sugar

"While I'm usually not crazy about meatloaf, I'm always on the lookout for a really great recipe because my husband is a fan. I gave this one a try and it's fantastic! I used garlic and herb bread crumbs because I happened to have those on hand, and I reduced the salt to 1 tsp to compensate for this. I felt the sauce was slightly bland, so I added an extra teaspoon of sugar and a pinch of salt when blending the ingredients, and then I just poured everything over the top of the loaf before baking -- this eliminated having to heat the sauce on the stove. Twice during baking, I spooned the sauce over the loaf, and it made it very moist. This recipe is going into my ""favorites"" collection."
