Ingredients:

  • 1 pound lean ground beef
  • 1/4 cup chopped onion
  • 2 tablespoons vegetable oil
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup yellow cornmeal
  • 3/4 cup whole kernel corn, canned or frozen and thawed
  • 2 eggs, well beaten
  • 1 tablespoons salt, or to taste
  • 1/8 teaspoon pepper
  • 1 teaspoon paprika
  • 1 teaspoon chili powder

"I believe the liquid was left out of this recipe. There is no way to mix in the cornmeal without some liquid. I added a cup of chicken broth and it was still very stiff. I will make again and add more broth. Flavor is good."
