Ingredients:
- leftover meatloaf
- tomatoes
- onion
- green pepper
- celery
- Cajun seasoning
- cheese

Preparation:
I have a recipe for leftover meatloaf besides the boring sandwich. I cook mine in a loaf pan and slice it. For the left overs I put it in a frying pan and heat it up. I then pour a quart of tomatoes (I can my own), store bought would be fine, I slice up an onion and green pepper, dice celery, and add about a tablespoon or more of Cajun seasoning. I simmer it for about 1 hour and then sometimes I top it with grated cheese. I have even had my family ask me not to serve the traditional meatloaf dinner but to wait and make all of it Cajun style. I NEVER have leftover meatloaf. If I have leftover baked potatoes (I always bake extra) I chop them up and put in onions, green peppers, and jalepenos and make a really spicy dinner.
