Pizza-Style Meat Loaf

This flavorful meatloaf contains roasted red peppers, Parmesan cheese, and black olives, and it's topped with a mixture of mozzarella cheese, tomatoes, and other vegetables.

Cook Time: 1 hour, 20 minutes

Total Time: 1 hour, 20 minutes

Yield: Serves 4 to 6

Ingredients:

  • 1 to 1 1/2 pounds lean ground beef
  • 1 large egg
  • 1/2 cup seasoned bread crumbs
  • 1 jar (12 ounces) roasted red bell peppers in water, drained and liquid reserved, divided
  • 1 can (2 1/2 ounces) sliced black olives, drained, divided
  • 2 tablespoons chopped fresh basil leaves
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 4 to 6 sliced or chopped grape tomatoes or cherry tomatoes

Preparation:

Heat oven to 350°.Spray a loaf pan with nonstick cooking spray or line with foil to make cleanup easier.

Mix ground beef with the egg and bread crumbs.

Chop the roasted red peppers and reserve about 3 tablespoons for the topping. Add the chopped peppers to the meat mixture along with 1/4 cup of the juice from the roasted peppers. Reserve 1 tablespoon of the black olives for topping and add the remaining black olives to the meat mixture. Add 1 1/2 tablespoons of the basil, the Parmesan cheese, and salt and pepper. Blend well and pack into the prepared loaf pan.

Combine the remaining roasted red peppers, the remaining 1/2 tablespoon of basil, the remaining 1 tablespoon of sliced olives, the mozzarella cheese, and the sliced tomatoes. Toss the mixture and set aside.

Bake the meat loaf for 1 hour and 5 minutes. Carefully drain off excess grease; top with the mozzarella cheese mixture and cook for 15 minutes longer.

Serves 4 to 6.

I assume the baking temp for the oven is 350 degrees. This is a very delicious meatloaf even without ONIONS. Why does everything have to have onions to be tasty? When I make it next time, I will do it just the same. I did think about a sprinkle or so of Taco seasoning but then it wouldn't be so much Pizza style. I like it very much just as it is.
