Sure to be a hit with family and friends, this simple meatloaf recipe with a barbecue glaze is a fantastic twist on a classic American dish. Featuring a homemade tomato-based sauce, it takes just a few minutes to prepare and get the meatloaf in the oven, so you'll have plenty of time to work on side dishes.
The meatloaf is made with a combination of lean ground beef and pork. If you like, try grinding a pound of pork loin from chops or a small roast, or use the food processor to mince the meat for the lean ground pork. The homemade barbecue sauce requires nothing more than ketchup and a few pantry staples. You can buy or make a Creole mustard from scratch, and its spicy taste is fantastic against the sauce's savory Worcestershire sauce and sweet brown sugar.
As with any meatloaf, avoid overmixing the ingredients and let the meatloaf rest after baking to prevent a dry meatloaf or one that falls apart when you slice it. Also, be sure that your onions are chopped as small as possible, so they don't create pockets inside the loaf; use a food chopper or processor if needed. While a loaf pan is convenient, you can form the meat mixture into a free-form loaf and cook it on a rimmed baking sheet covered in foil.

Cooking spray, for greasing the pan

1/2 cup ketchup
-
1 teaspoon Worcestershire sauce
